Why are veggies so difficult for children?

Children use their eyes, hands, and sense of smell to gather information about a new food before putting it in their mouth. Some veggies look, feel and smell similar but taste very different. This makes them more difficult to anticipate when trying them for the first time. Some veggies like bok choy or green onion have a fairly strong taste, a child may be taken aback by this. Some children love these strong flavors while others are more weary.
